  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 400°F.
  2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
  3. Cook lasagna noodles according to package instructions.
  4. Mix ricotta, egg, and Parmesan in a bowl.
  5. Layer noodles, ricotta mixture, roasted squash, marinara, and mozzarella in a baking dish.
