Roasted Garlic Couscous

A simple and flavorful dish made with roasted garlic and couscous.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups water or vegetable broth
  • 1 head garlic
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
  3. Bring water or broth to a boil in a saucepan.
  4. Remove from heat, stir in couscous, cover, and let sit for 5 minutes.
  5. Squeeze roasted garlic cloves into the couscous.
  6. Fluff with a fork, add salt, pepper, and parsley.
  7. Serve warm.

  • Use vegetable broth for extra flavor.
  • Adjust seasoning to taste.
