- 2 lbs turnips, peeled and cubed
- 1 head garlic
- 2 tbsp olive oil
- 1/4 cup butter
- 1/4 cup milk or cream
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- Cut the top off the garlic head, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30 minutes.
- Meanwhile, boil turnips in salted water until tender (about 20 minutes). Drain well.

- Mash until smooth or blend for a creamier texture.
