A creamy and flavorful hummus made with roasted pumpkin, chickpeas, and warm spices.

Ingredients

  • 1 cup roasted pumpkin puree
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt to taste
  • 12 tbsp water (if needed for consistency)

Instructions

  1. Preheat oven to 400°F. Cut pumpkin into cubes, toss with 1 tbsp olive oil, and roast for 25 minutes until tender. Blend into a puree.
  2. In a food processor, combine chickpea, pumpkin puree, tahini, garlic, lemon juice, cumin, paprika, and salt.
  3. Blend until smooth. Add water if needed for a creamier texture.
  4. Drizzle with olive oil and sprinkle smoked paprika before serving.
