A simple and delicious rustic apple galette with a flaky crust and tender spiced apples.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 34 tablespoons ice water
  • 3 medium apples, peeled and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour and salt. Cut in butter until crumbly. Add ice water, 1 tablespoon at a time, until dough comes together.
  3. Roll dough into a rough circle on a floured surface. Transfer to the baking sheet.
  4. Toss apple slices with sugar, cinnamon, and lemon juice. Arrange them in the center of the dough, leaving a 2-inch border.
  5. Fold edges of dough over the apples, pleating as needed. Brush dough with egg wash and sprinkle with coarse sugar.
  6. Bake for 35-40 minutes until crust is golden and apples are tender. Cool slightly before serving.
