A hearty and flavorful dish featuring sausage and wild rice stuffed inside a pumpkin.

Ingredients

  • 1 medium pumpkin
  • 1 lb sausage
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried sage
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Cut off the top of the pumpkin and scoop out seeds.
  3. Cook wild rice in chicken broth until tender.
  4. Brown sausage in olive oil, then add onion and garlic.
  5. Mix cooked rice with sausage mixture and sage.
  6. Stuff pumpkin with filling.
  7. Place pumpkin on baking sheet and bake for 45-60 minutes.
  8. Let rest before slicing.
