Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 2 bell peppers (red, yellow, or green), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sliced peppers and onions with olive oil, salt, pepper, oregano, and garlic powder.
  3. Arrange sausage links and vegetables on a sheet pan in a single layer.
  4. Bake for 25-30 minutes, flipping sausage and stirring vegetables halfway through.
  5. Serve hot with crusty bread or over rice.
