Fresh shrimp ceviche marinated in citrus juices with crisp vegetables and herbs.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1 small red onion, thinly sliced
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • Salt to taste

Instructions

  1. Cook shrimp in boiling water for 2 minutes, then drain and cool.
  2. Combine lime juice and lemon juice in a bowl.
  3. Add shrimp, onion, cucumber, tomato, jalapeño, and cilantro to the bowl.
  4. Mix well and refrigerate for 30 minutes.
  5. Serve chilled with tortilla chips or tostadas.
