  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • 1 mango, diced
  • 1/4 cup red onion, diced
  • 1 jalapeño, seeded and minced
  • 2 tbsp lime juice

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp, chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes per side until pink.
  3. In a bowl, mix mango, red onion, jalapeño, and lime juice to make the salsa.
  4. Assemble bowls with rice, shrimp, avocado, lettuce, black beans, and mango salsa.
  5. Garnish with cilantro and serve with lime wedges.

Notes

  • Use pre-cooked shrimp to save time.
  • Adjust spice level by adding more or less jalapeño.
