A simple and flavorful barbacoa recipe made in a slow cooker. Perfect for tacos, burritos, or rice bowls.

  • 3 lbs beef chuck roast, trimmed and cut into chunks
  • 1/4 cup apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp ground cloves
  • 2 chipotle peppers in adobo sauce
  • 1/2 cup beef broth
  • 1 onion, sliced
  • 3 bay leaves

Instructions

  1. Place beef chunks in the slow cooker.
  2. Add apple cider vinegar, garlic, cumin, oregano, salt, pepper, cloves, chipotle peppers, beef broth, onion, and bay leaves.
  3. Stir to combine.
  4. Cover and cook on low for 8 hours or high for 4-5 hours.
  5. Shred the beef with forks and mix with the juices.
  6. Serve warm with tortillas or rice.

  • For extra flavor, sear the beef before slow cooking.
  • Adjust spice levels by adding more or fewer chipotle peppers.
