A simple and delicious slow cooker recipe for chicken burrito bowls packed with flavor.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Place chicken breasts in slow cooker
  2. Add rice, black beans, corn, salsa, taco seasoning, chicken broth, salt, and pepper
  3. Stir to combine ingredients
  4. Cook on low for 6 hours or high for 3 hours
  5. Remove chicken, shred with forks, then return to pot
  6. Stir well and serve with optional toppings

Notes

  • For spicier flavor, use hot salsa
  • Can substitute brown rice but may need extra liquid
  • Store leftovers in airtight container for up to 4 days
