Easy and flavorful slow cooker chicken enchiladas. Perfect for busy days.

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 6 corn tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Mix chicken, half the enchilada sauce, cumin, and chili powder in a bowl.
  2. Spread a thin layer of sauce in the slow cooker.
  3. Fill tortillas with chicken mixture, roll, and place in the slow cooker.
  4. Top with remaining sauce and cheese.
  5. Cook on low for 2 hours.
  6. Serve with sour cream and onions.
