Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour

Instructions

  1. Place chicken thighs at the bottom of the slow cooker.
  2. Add carrots, celery, onion, garlic, and potatoes.
  3. Pour chicken broth over the ingredients.
  4. Sprinkle thyme, rosemary, salt, and black pepper.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Remove chicken, shred it, and return to the pot.
  7. Mix flour with 1/4 cup water and stir into the stew to thicken.
  8. Cook for an additional 15 minutes.
  9. Serve hot.

Notes

  • You can use chicken breasts instead of thighs.
  • Add more broth if you prefer a thinner stew.
  • Store leftovers in the fridge for up to 3 days.
