A hearty and easy slow cooker cowboy casserole packed with ground beef, beans, and cheese.

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Stir well.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. Top with shredded cheese and let it melt before serving.

Notes

  • You can substitute ground turkey for ground beef.
  • Add more cheese if desired.
  • Serve with cornbread or tortilla chips.
