  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add diced onion, garlic, and bell pepper. Cook until softened.
  3. Transfer the mixture to a slow cooker.
  4. Add diced tomatoes, kidney beans, corn, beef broth, chili powder, and cumin.
  5. Stir well and season with salt and pepper.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. Serve hot.
