A simple and delicious slow cooker recipe featuring tender chicken in a creamy tomato basil sauce.

  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add diced tomatoes, chicken broth, garlic, salt, black pepper, oregano, and red pepper flakes (if using). Stir to combine.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred the chicken using two forks.
  5. Stir in heavy cream and fresh basil.
  6. Cook on low for an additional 15 minutes.
  7. Serve over pasta, rice, or with crusty bread.

Notes

  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker before adding the cream.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Store leftovers in an airtight container for up to 3 days.
