Tender beef bites and potatoes cooked in a rich garlic butter sauce, made easy in your slow cooker.

  • 1.5 lbs beef sirloin, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • 2 tbsp chopped fresh parsley for garnish

Instructions

  1. In a bowl, mix melted butter, minced garlic, thyme, rosemary, salt, and pepper.
  2. Place beef bites and potatoes in the slow cooker.
  3. Pour the garlic butter mixture over the beef and potatoes, stirring to coat evenly.
  4. Add beef broth to the slow cooker.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender.
  6. Garnish with fresh parsley before serving.

Notes

  • Use baby potatoes for even cooking, or cut larger potatoes into chunks.
  • For extra flavor, sear the beef before adding it to the slow cooker.
  • Adjust salt and pepper to taste.
