  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup small pasta (like ditalini or orzo)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and sauté onions, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute.
  3. Transfer the sautéed vegetables to the slow cooker.
  4. Add diced chicken, chicken broth, oregano, thyme, salt, and pepper.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Add pasta in the last 30 minutes of cooking.
  7. Stir well and serve hot.
