A moist and tangy lemon cake made easily in your slow cooker.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice

Instructions

  1. Grease the slow cooker crock with butter or cooking spray.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Add milk, oil, egg, lemon zest, and lemon juice. Stir until smooth.
  4. Pour batter into the slow cooker.
  5. Cover and cook on high for 2 hours or until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • Do not open the lid frequently while cooking.
  • Check for doneness after 1.5 hours.
  • For extra flavor, drizzle with lemon glaze after cooling.
