Slow Cooker Lemon Herb Chicken and Rice

A flavorful and easy slow cooker dish featuring tender chicken and rice infused with lemon and herbs.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, oregano, salt, and pepper.
  3. Drizzle with olive oil and stir gently.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Remove chicken, shred or slice, and return to the slow cooker.
  6. Sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, sear chicken breasts before adding to the slow cooker.
  • Adjust cooking time if using brown rice.
