Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat. Sear chicken for 2-3 minutes per side.
  3. Place rice, chicken broth, lemon juice, lemon zest, garlic, thyme, and rosemary in the slow cooker.
  4. Add seared chicken on top.
  5. Cook on low for 4 hours or high for 2 hours.
  6. Serve warm.
