A delicious and easy slow cooker peach French toast casserole perfect for breakfast or brunch.

Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 8 slices bread, cubed
  • 2 cups sliced peaches (fresh or canned)
  • 1/4 cup brown sugar
  • 2 tbsp butter, melted

Instructions

  1. Grease the slow cooker with cooking spray.
  2. In a bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and nutmeg.
  3. Place bread cubes in the slow cooker. Pour the egg mixture over them.
  4. Add sliced peaches on top.
  5. Sprinkle brown sugar and drizzle melted butter.
  6. Cover and cook on low for 3-4 hours or until set.
  7. Serve warm with maple syrup.
