- 1.5 lbs flank steak, sliced thin
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup beef broth
- Juice of 1 lime
- 8 small flour tortillas
- Optional toppings: sour cream, shredded cheese, avocado
- In a bowl, mix chili powder, cumin, paprika, salt, and black pepper.
- Toss sliced steak with the spice mix until coated.
- Heat olive oil in a skillet over medium-high heat. Sear steak for 2-3 minutes per side.
- Place seared steak, bell peppers, onion, garlic, beef broth, and lime juice in the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Warm tortillas before serving.
- Serve steak and vegetables in tortillas with optional toppings.
Notes
