A hearty and flavorful soup combining tortellini, taco seasoning, and slow cooker convenience.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 cup frozen corn
  • 1 package cheese tortellini (9 oz)
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Transfer the beef to a slow cooker. Add taco seasoning, beef broth, diced tomatoes, black beans, and corn. Stir.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Add tortellini and cook for another 20 minutes on high until tender.
  5. Stir in heavy cream and top with cheddar cheese and cilantro before serving.

Notes

  • For extra heat, add diced jalapeños or hot sauce.
  • Substitute ground turkey for a lighter version.
  • Store leftovers in the fridge for up to 3 days.
