A simple and flavorful Italian pasta dish with zucchini, cheese, and basil.

Ingredients

  • 400g spaghetti
  • 2 medium zucchinis, thinly sliced
  • 100g Provolone or Scamorza cheese, grated
  • 50g Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 10 fresh basil leaves, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a pan over medium heat. Sauté garlic until fragrant.
  3. Add zucchini slices and cook until golden and tender. Season with salt and pepper.
  4. Add the cooked spaghetti to the pan with zucchini. Toss well.
  5. Add grated cheeses and a splash of reserved pasta water. Stir until creamy.
  6. Mix in basil leaves. Adjust seasoning if needed.
  7. Serve immediately with extra Parmesan on top.

Notes

  • Use young zucchinis for best texture.
  • Replace Provolone with Mozzarella for a milder taste.
  • Adjust cheese quantity for desired creaminess.
