Delicious spiced pumpkin pie bars with a buttery crust and creamy pumpkin filling. Perfect for fall gatherings.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 can (15 oz) pumpkin puree
  • 2 large eggs
  • 3/4 cup brown sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Mix flour, granulated sugar, and butter until crumbly. Press into the pan to form the crust.
  3. Bake the crust for 15 minutes.
  4. Whisk pumpkin puree, eggs, brown sugar, heavy cream, vanilla, pumpkin pie spice, cinnamon, and salt in a bowl.
  5. Pour the filling over the baked crust.
  6. Bake for 35-40 minutes until set.
  7. Cool completely before slicing into bars.

Notes

  • Use pure pumpkin puree, not pumpkin pie mix.
  • Store in the fridge for up to 4 days.
  • Top with whipped cream if desired.
