- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 can (15 oz) pumpkin puree
- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- Mix flour, granulated sugar, and butter until crumbly. Press into the pan to form the crust.
- Bake the crust for 15 minutes.
- Whisk pumpkin puree, eggs, brown sugar, heavy cream, vanilla, pumpkin pie spice, cinnamon, and salt in a bowl.
- Pour the filling over the baked crust.
- Bake for 35-40 minutes until set.
- Cool completely before slicing into bars.
Notes
- Use pure pumpkin puree, not pumpkin pie mix.
- Store in the fridge for up to 4 days.
- Top with whipped cream if desired.
