A flavorful and easy-to-make enchilada bake packed with spicy black beans and cheese.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mix black beans, corn, tomatoes, chili powder, cumin, garlic powder, onion powder, and cayenne pepper.
  3. Spread a thin layer of enchilada sauce in a baking dish.
  4. Layer tortillas, bean mixture, cheese, and sauce.
  5. Repeat layers, finishing with cheese.
  6. Bake uncovered for 25 minutes.
  7. Garnish with cilantro before serving.

Notes

  • Use flour tortillas if corn tortillas are unavailable.
  • Add cooked chicken or beef for extra protein.
