A delicious and healthy vegetarian burger made with sweet potatoes and black beans.

Ingredients

  • 1 large sweet potato, cooked and mashed
  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Mix mashed sweet potato, black beans, breadcrumbs, egg, and spices in a bowl.
  3. Form mixture into patties.
  4. Heat olive oil in a pan over medium heat.
  5. Cook patties for 3-4 minutes per side until golden brown.
  6. Transfer patties to a baking sheet and bake for 10 minutes.
  7. Serve on buns with your favorite toppings.

Notes

  • For vegan version, replace egg with flax egg.
  • Patties can be frozen before cooking.
  • Add more breadcrumbs if mixture is too wet.
