A nutritious and flavorful dish featuring roasted sweet potatoes as the base, topped with fresh vegetables and protein.

Ingredients

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup feta cheese (optional)
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and cube sweet potatoes.
  3. Toss sweet potatoes with olive oil, salt, and pepper.
  4. Roast for 25-30 minutes until tender.
  5. Cook quinoa according to package instructions.
  6. Assemble bowls with sweet potatoes, quinoa, avocado, tomatoes, red onion, and cilantro.
  7. Sprinkle with feta cheese and drizzle with lime juice.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Swap quinoa for brown rice if preferred.
