A simple and delicious recipe for homemade sweet potato gnocchi with sage butter sauce. Perfect for a cozy dinner.

  • 2 medium sweet potatoes
  • 1 1/2 cups all-purpose flour
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 4 tbsp butter
  • 8 fresh sage leaves
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F. Bake the sweet potatoes until tender, about 45 minutes.
  2. Once cooled, peel and mash the sweet potatoes in a bowl.
  3. Add flour, egg, salt, and nutmeg to the mashed sweet potatoes. Mix until a dough forms.
  4. Divide the dough into small portions and roll each into a rope on a floured surface. Cut into 1-inch pieces.
  5. Bring a pot of salted water to a boil. Cook the gnocchi in batches until they float to the top, about 2-3 minutes.
  6. In a skillet, melt butter over medium heat. Add sage leaves and cook until crisp.
  7. Toss the cooked gnocchi in the sage butter sauce. Serve with grated Parmesan if desired.

Notes

  • Do not overwork the dough to keep the gnocchi light.
  • Fresh sage leaves add the best flavor, but dried sage can be used as a substitute.
