A nutritious and flavorful salad combining sweet potatoes and kale for a healthy meal.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced
  • 4 cups kale, chopped
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with 1 tbsp olive oil, maple syrup, salt, and pepper.
  3. Roast sweet potatoes for 25 minutes or until tender.
  4. Massage kale with remaining olive oil and apple cider vinegar.
  5. Combine roasted sweet potatoes, kale, cranberries, and walnuts in a bowl.
  6. Toss well and serve.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • Add grilled chicken for extra protein.
  • Substitute walnuts with almonds if preferred.
