- 2 cups mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 unbaked pie crust
- 1 cup mini marshmallows
- Preheat oven to 350°F (175°C).
- Mix mashed sweet potatoes, sugar, melted butter, eggs, milk, vanilla, cinnamon, and nutmeg in a bowl.
- Pour the mixture into the unbaked pie crust.
- Bake for 45-50 minutes or until set.
- Remove from oven and top with mini marshmallows.
- Return to oven for 3-5 minutes or until marshmallows are lightly browned.
- Let cool before serving.
