  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup vegan butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking soda, salt, ginger, cinnamon, and cloves in a bowl.
  3. Cream vegan butter and brown sugar until fluffy. Mix in molasses, milk, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Roll dough into 1-inch balls and place on baking sheets. Flatten slightly.
  6. Bake for 10-12 minutes until edges are firm.
  7. Cool on baking sheets for 5 minutes, then transfer to wire racks.

Notes

  • Dough can be chilled for 30 minutes if too sticky.
  • Store in an airtight container for up to 1 week.
  • For softer cookies, bake for 9-10 minutes.
