A creamy and comforting vegan rice pudding made in a slow cooker. Perfect for dessert or breakfast.

  • 1 cup short-grain white rice
  • 4 cups almond milk
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Add the rice, almond milk, coconut sugar, vanilla, cinnamon, nutmeg, and salt to the slow cooker.
  3. Stir well to combine.
  4. Cook on low for 4 hours, stirring occasionally.
  5. Once creamy and tender, serve warm or chilled.
