1 cup chopped dates
1 cup boiling water
1 tsp baking soda
1/4 cup vegan butter
1/2 cup brown sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
For the toffee sauce: 1/2 cup brown sugar, 1/4 cup vegan butter, 1/2 cup coconut milk
Instructions
Soak dates in boiling water with baking soda for 10 minutes.
Cream vegan butter and sugar, then mix in vanilla.
Blend soaked dates into a paste and add to the butter mixture.
Sift flour, baking powder, and salt, then fold into the wet ingredients.
Pour batter into a greased slow cooker.
Cook on high for 2-3 hours or until a skewer comes out clean.
For the sauce, melt butter, sugar, and coconut milk in a pan until thickened.
