  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Cook until soft.
  3. Stir in bell pepper and cook for 2 minutes.
  4. Add beans, corn, tomatoes, and vegetable broth.
  5. Mix in chili powder, cumin, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Serve hot with toppings of your choice.

Notes
