A simple and flavorful vegetarian taco recipe featuring sweet potatoes and black beans. Perfect for a quick weeknight meal.

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 8 small corn tortillas
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes until tender.
  4. Warm black beans in a small saucepan over low heat.
  5. Heat tortillas in a dry skillet or microwave.
  6. Assemble tacos with roasted sweet potatoes, black beans, red onion, cilantro, and avocado.
  7. Squeeze lime juice over each taco before serving.
