  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups fat-free chicken broth
  • 2 tbsp taco seasoning
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Brown the ground turkey in a large pot over medium heat.
  2. Add onion, bell peppers, and garlic. Cook until softened.
  3. Stir in black beans, pinto beans, corn, and diced tomatoes.
  4. Pour in chicken broth and add taco seasoning, cumin, chili powder, paprika, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot with optional toppings like cilantro, lime wedges, or fat-free Greek yogurt.
