A hearty and flavorful wild rice pilaf with vegetables and herbs.

Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1/4 cup chopped parsley

Instructions

  1. Rinse the wild rice under cold water.
  2. Heat olive oil in a pot over medium heat. Add onion, garlic, carrot, and celery. Cook until softened.
  3. Add wild rice, thyme, rosemary, salt, and pepper. Stir to combine.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
  6. Remove from heat and let sit covered for 5 minutes.
  7. Fluff with a fork and stir in chopped parsley before serving.

Notes

  • Wild rice takes longer to cook than white or brown rice.
  • You can substitute vegetable broth with chicken broth if not vegetarian.
  • For extra flavor, toast the wild rice in a dry pan before cooking.
