  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse the wild rice under cold water.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Add wild rice and stir for 1 minute.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 45 minutes.
  7. Stir in cranberries, pecans, salt, and pepper.
