A delicious and healthy twist on the classic apple crisp, using zucchini for a lower sugar option.

Ingredients

  • 4 cups zucchini, peeled and sliced
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss zucchini with sugar, cinnamon, and nutmeg. Place in baking dish.
  3. Mix flour, oats, brown sugar, and butter to make topping.
  4. Sprinkle topping over zucchini.
  5. Bake for 35-40 minutes until golden and bubbly.
  6. Cool slightly before serving.
