- 3 medium zucchinis, sliced lengthwise
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Slice zucchini lengthwise into thin strips.
- Mix ricotta, Parmesan, egg, basil, oregano, salt, and pepper in a bowl.
- Spread marinara sauce in a baking dish.
- Place a spoonful of the cheese mixture on each zucchini strip and roll it up.
- Arrange the rolls in the baking dish.
- Top with mozzarella cheese.
- Bake for 25 minutes or until cheese is melted and bubbly.
Notes
- Use a mandoline for even zucchini slices.
