A quick and healthy zucchini pesto pasta dish that’s perfect for a light meal.

Ingredients

  • 2 medium zucchinis, sliced
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 8 oz pasta of your choice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a food processor, blend basil, pine nuts, Parmesan, garlic, and olive oil until smooth.
