A simple recipe for stuffed peppers filled with a savory mixture of rice, vegetables, and cheese.

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the cooked rice, diced tomatoes, half the cheese, onion, garlic, oregano, salt, and pepper.
  4. Stuff each pepper with the rice mixture.
  5. Place the peppers upright in a baking dish.
  6. Top with the remaining cheese.
  7. Bake for 30 minutes, until the peppers are tender and the cheese is melted.

Notes

  • You can use any color bell pepper.
  • Add cooked ground beef or turkey if desired, but skip alcohol, bacon, or ham.
