- 1 3/4 cups almond flour
- 1/4 cup granulated sweetener of choice
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup pumpkin puree
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together almond flour, sweetener, baking soda, pumpkin pie spice, and salt.
- In a separate bowl, beat eggs. Add pumpkin puree, melted coconut oil, and vanilla. Mix well.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Pour batter into prepared pan. Smooth the top.
- Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
Notes
- You can use honey or maple syrup instead of granulated sweetener. Adjust baking time slightly if needed.
