  • 2 pounds small red potatoes
  • 1/2 cup salami, diced
  • 1/2 cup provolone cheese, diced
  • 1/2 cup roasted red peppers, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup pepperoncini, chopped
  • 1/4 cup red onion, finely diced
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Boil potatoes in salted water until fork-tender, about 15 minutes.
  2. Drain and let potatoes cool. Cut into bite-sized pieces.
  3. In a large bowl, combine potatoes, salami, provolone, roasted peppers, olives, pepperoncini, and red onion.
  4. In a small bowl, whisk olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour dressing over potato mixture. Toss gently to coat.
  6. Refrigerate for at least 1 hour before serving. Serve cold.

Notes

  • You can substitute mozzarella for provolone.
  • Add fresh parsley for extra color.
  • This salad keeps well in the fridge for up to 3 days.
