- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 32 oz cream cheese, softened
- 1 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1/2 cup apple cider
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 large eggs
- 1/2 cup apple cider, for topping
- Preheat your oven to 325°F (163°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat cream cheese and 1 cup sugar until smooth.
- Add flour, then mix in apple cider, sour cream, vanilla, cinnamon, and nutmeg.
- Add eggs one at a time, mixing gently after each.
- Pour the filling over the cooled crust.
- Bake for 55 to 65 minutes, until the edges are set but the center jiggles slightly.
- Turn off the oven and let the cheesecake cool inside with the door cracked for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, simmer 1/2 cup apple cider until reduced to a syrup, then drizzle over the top.
