This moist apple cider cake has a cinnamon sugar coating. It tastes like a donut. Perfect for fall.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1/2 cup buttermilk
  • For topping: 1/4 cup melted butter, 1/2 cup granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9-inch round or bundt pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and sugar until light. Add eggs one at a time, then vanilla.
  4. Mix apple cider and buttermilk in a small bowl.
  5. Add flour mixture and cider mixture alternately to butter mixture, starting and ending with flour. Mix just until combined.
  6. Pour batter into prepared pan. Bake 40-45 minutes until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then turn out onto a wire rack.
  8. Brush top with melted butter. Sprinkle cinnamon sugar mixture over the warm cake.

Notes

  • Use fresh apple cider for best flavor. Avoid apple juice.
  • You can substitute buttermilk with 1/2 cup milk plus 1/2 tablespoon lemon juice.
  • Let cake cool completely before storing in an airtight container.
