- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple cider
- 1/2 cup buttermilk
- For topping: 1/4 cup melted butter, 1/2 cup granulated sugar mixed with 1 teaspoon cinnamon
- Preheat your oven to 350°F. Grease a 9-inch round or bundt pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream butter and sugar until light. Add eggs one at a time, then vanilla.
- Mix apple cider and buttermilk in a small bowl.
- Add flour mixture and cider mixture alternately to butter mixture, starting and ending with flour. Mix just until combined.
- Pour batter into prepared pan. Bake 40-45 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then turn out onto a wire rack.
- Brush top with melted butter. Sprinkle cinnamon sugar mixture over the warm cake.
Notes
- Use fresh apple cider for best flavor. Avoid apple juice.
- You can substitute buttermilk with 1/2 cup milk plus 1/2 tablespoon lemon juice.
- Let cake cool completely before storing in an airtight container.
