These apple cider donuts are soft, spiced, and full of fall flavor. They are baked, not fried, for a lighter treat.

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350 degrees F. Grease a donut pan.
  2. In a small saucepan, simmer apple cider over medium heat until reduced to 1/2 cup, about 10 minutes. Let cool.
  3. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Beat in eggs and vanilla.
  5. Stir in reduced apple cider and buttermilk.
  6. Add dry ingredients to wet ingredients. Mix until just combined.
  7. Pipe or spoon batter into prepared donut pan, filling each cavity 2/3 full.
  8. Bake for 10 to 12 minutes, until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • You can roll warm donuts in cinnamon sugar for extra sweetness.
  • Store donuts in an airtight container for up to 3 days.
