- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups peeled and diced apples
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup all-purpose flour
- 1/4 cup cold butter, cubed
- Preheat oven to 325°F.
- Mix graham cracker crumbs and melted butter. Press into a 9-inch springform pan.
- Bake crust for 10 minutes. Let cool.
- Beat cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing on low after each.
- Pour filling over crust.
- Toss apples with brown sugar and cinnamon. Spoon over filling.
- Combine flour and cold butter. Cut until crumbly. Sprinkle over apples.
- Bake for 55-60 minutes. Center should be almost set.
- Cool on a wire rack. Refrigerate for 4 hours before serving.
